Irish Soda Bread- An authentic Recipe!

Ingredients:-

1 large egg, slightly beaten

2 1/2 cups buttermilk

3 tablespoons caraway seeds

2 1/2 cups mixed light and dark raisins, drenched in water for 15-20 minutes and drained

1/4 pound (1 stick) butter

1 teaspoon baking soda

1 1/2 teaspoons salt

2 teaspoons baking powder

3/4 cup sugar

5 cups sifted all-purpose unbleached flour

Method: –

  • Generously butter two bread pans. Preheat the oven to 350 degrees F.
  • Blend together the baking soda, salt, baking powder, sugar and sifted flour. Mix butter very thoroughly with your hands until it gets farinaceous. Stir in caraway seeds and raisins.
  • Then, add the egg and buttermilk to the flour mixture. Mix it well. Shape dough into two loaf of bread and place in the pans.
  • Then, bake it for one hour. Test with a toothpick for softness and cool for 3-5 minutes in the pans followed by wire rack.
